Norwegian Heart Waffles
4 large eggs
½ cup granulated white sugar
1 tsp vanilla extract
1 tsp ground cardamom
2 cups all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup (1stick) butter, melted
2 cups buttermilk or milk (slightly warmed)
Optional: ¾ cup sour cream (for richness)
1. In a medium bowl, whisk together the flour, sugar, baking powder, salt, and cardamom.
2. In a separate large bowl, whisk the eggs and sugar until slightly fluffy. Add milk, sour cream (if using), and vanilla.
3. Gradually add the dry ingredients to the wet, mixing until just combined.
4. Stir in the melted butter.
5. Important! Let the batter rest for 15-20 minutes to allow the flour to hydrate, resulting in a better texture.
6. Preheat heart-shaped waffle iron. Brush generously with melted butter.
7. Pour enough batter to cover the heart shapes (roughly ½ cup), cook for 2-3 minutes until golden brown.
Serve warm with sour cream, raspberry jam, and/or brown cheese.
